Along with Pradleves and Monterosso Grana, it is one of the three Valle Grana communities known for the cheese of the same name. It is known that already in the 13th century, the citizens who paid the taxes demanded by local lords gave forms of Castelmagno cheese in exchange, a sign that admirers were far-reaching for this cows’ milk cheese, which has been protected with D.O.C. (Denomination of Controlled Origin) certification since 1982 and by D.O.P. (Denomination of Protected Origin) since 1996. Its production is still carried out today using exclusively the Piedmont breed of cow raised on fresh forage and the cheese forms are aged in natural caves. Within these mountains, therefore, the old-time vocation of the “magari”, the shepherds from Piedmont’s Alps who are adept at the care of milk-giving animals, still survives. The festival of San Mango, patron saint of the “magari”, is a chance for the “magari” to meet up and celebrate all together at the town’s sanctuary, where there are 15th century frescos attributed to Pietro da Saluzzo.
