Arborio (VC)
As happens in many of the municipalities in the Vercelli district, the main economic activity of Arborio is the cultivation of rice. A special variety, famous throughout the world, is grown here and is named after the town itself. The grains are particularly large and excellent for making risotto. Created in 1946 as the result of experimentation by Domenico Marchetti di Arboreo, this super fine, pearly rice, which swells in size during cooking while retaining the firm “al dente” consistency of the central, starch-rich nucleus, is now served on tables all over the world.
