The Piemonte land is a generous land especially in the autumn - the mushroom and truffle season. Known and appreciated since antiquity, the white truffle was sought after by 18th century European courts. Its value has not diminished with the passing of time to such an extent that today several varieties reach staggering prices.
Various small, excellent Piemonte products, which are at risk of disappearing, are protected by the Presidio di Slow which maintains, as its goal, the promotion of the territory, the revival of traditional techniques and occupations, and therefore, the safeguarding of native species and ancient varieties of fruit and vegetables from extinction. The various Presidi involve the producers directly; they offer producers the assistance to improve the quality of their products, they facilitate exchange among various countries, and they look for new market outlets (local and international).
