Brasato al Barolo
Ingredients (for about 10 people)
2 kg. of Piedmont ox or beef, 2 litres of Barolo, 200 g. carrots, 100 g. celery, 200 g. lard, 500 g. onions, sage, bay leaves, rosemary, black peppercorns, cinnamon, grated nutmeg, juniper berries, cloves, extra virgin olive oil, butter, salt to taste.
Preparation
Place the meat in a large bowl with the vegetables cut into pieces and cover with the Barolo. Put in a cool place and let it marinate for 24 hours. When it is time to cook the meat, take it out of the marinade, brown it on all sides in oil and butter, add the vegetables and herbs, then add the marinade. Salt only after browning the meat so that it is sealed by its crust. Cook very slowly, in the covered pot, for about two hours for every kilogram of meat. When done, take the meat out of the pot and put the liquid through the mill or in the blender with the vegetables, adding a little cornstarch to thicken it so as to obtain a thick, delicious gravy. Serve hot presenting the meat whole on a cutting board or tray with just a few slices cut and overlapping, covered with the hot gravy. Excellent with seasonal vegetables cooked in butter, or glazed onions and carrots, mashed potatoes or polenta.

Alain Elkann
“Torino remains a beautiful city, but not only that, it is also a serious city in which one can work well. One feels protected…Then, in those hills on certain winter days when the sky is blue and the air is clean, it’s like being in Kathmandu”.
Stefania Rocca
"My father used to work at Fiat. I never saw Torino as a limitation. It’s an elegant city. The fog has never caused me to be anxious or sad. My mother used to say that it helps us to look at ourselves inside."
Caparezza
“And I love eating in Torino, most of all the raw meat. I like this city. I’ve been to the Museo del Cinema three times and even took a walk up the hill. After a few kilometres I was at the top of Colle della Maddalena and could see the entire city.”
