Carne all'albese

 

Ingredients (for 4 people)
250 g. veal loin sliced thin
an emulsion of olive oil, salt, pepper and lemon juice (if you like, you can add a little crushed garlic and a pinch of mustard), parmesan cheese in flakes or white truffles.

Preparation
Brush a platter with a little of the oil emulsion and arrange the slices of meat, pouring the rest of the emulsion over them. Sprinkle with flakes of Parmesan cheese or white truffles. Serve immediately.
