Soupa Grassa
Ingredients (for 4 people)
8 toasted slices of rye bread, 200 gr. of soft toma cheese, meat broth, 100 gr. Butter, 1 onion, juniper berries, salt to taste.
Preparation
Slice a loaf of rye bread into ½ cm slices and then cut them into squares or rectangles a few centimetres long. Put the pieces of bread in the oven to toast for a few minutes. In the meantime, slice an onion into thin julienne strips and brown it in a pan with butter and a few juniper berries. While the onions are cooking, put a little broth into several individual bowls or soup tureens along with the bread croutons. Pour the browned onion into the individual bowls, cover the contents with several thin slices of toma cheese and place the bowls in the oven to cook au gratin. When the cheese on the surface starts to brown, remove the bowls from the oven and serve.
